Last night we brewed "Vivian", our Belgian Wit for the month of May. Ryan W and I were joined by Kevin and Kreg Sills. Kreg works for a competing brew club. His club has double the capacity of Knoll Street Brewing, but only 1 member.

This is the first beer that we've done that we haven't had to steep grains. Most wits don't use any specialty grains.
7:11 2 Gal water heated
7:49 Water boiling, 3.3 lbs wheat LME and 3.3 lbs Pilsner LME added.
8:03 Boil started. 1 oz Tettnanger hops added.
8:18 .75 oz Saaz hops added.
8:48 1 tsp Irish moss and 1 tsp yeast nutrient added.
8:58 .25 oz Saaz hops added.
9:03 Flameout. 1 tsp flour, 2 tsp ground coriander, pinch ginger and zest of 2 grapefruits added.
10:03 1 qt yeast starter (WL400 Belgian Wit) pitched @ 66°. OG = 1.046
This should be a nice refreshing summer beer. It'll only get up to about 4.3% ABV.
Kreg has two members but only one who supports it financially :)
